Instructions
- Preheat oven to 350°F (175°C) and grease a muffin tin.
- In a large bowl, combine flour, baking powder, salt, cinnamon, and nutmeg.
- In another bowl, whisk together granulated sugar, brown sugar, egg, milk, vanilla, and melted butter.
- Mix wet ingredients into dry ingredients until just combined.
- Fold in diced apples gently.
- Spoon batter into prepared muffin tin, filling each cup about 3/4 full.
- Bake for 15-18 minutes or until a toothpick inserted comes out clean.
- While fritters cool, mix powdered sugar, milk, and vanilla extract for the glaze.
- Drizzle glaze over cooled fritters before serving.
