- 1 can (14 ounces) diced tomatoes
- 2 1/2 cups water
- 1 teaspoon salt
- 1/4 cup fresh basil leaves, torn
- 1/4 cup grated Parmesan cheese
Feel free to substitute the spaghetti with any pasta you have at hand. If you’re feeling adventurous, Mama Lou often tossed in a handful of spinach or a sprinkle of oregano for added depth, and I’ve taken to doing the same with Ouma, adding our little twist to this beloved dish.
Instructions
- In a large pot, heat the olive oil over medium heat. Add the garlic slices and red pepper flakes, stirring until the garlic is golden and fragrant, about 2 minutes.
- Add the diced tomatoes, water, and salt. Bring the mixture to a boil. This step always reminds me of the excitement of watching the pot come alive, a moment I shared countless times with Ouma, our eyes wide with anticipation.
- Add the spaghetti to the pot, ensuring it is submerged in the liquid. Reduce the heat to a simmer and let it cook, stirring occasionally, until the pasta is al dente, about 10 minutes.
- Once the pasta is cooked, remove the pot from heat. Stir in the fresh basil leaves and half of the Parmesan cheese, allowing it to melt into the sauce.
- Serve the pasta immediately, garnished with the remaining Parmesan cheese. The scent of fresh basil and melting cheese is like a warm hug from Mama Lou herself, a comforting embrace that lingers long after the meal is over.
