  • 1 cup breadcrumbs
  • 1/2 cup milk
  • 1 egg, beaten
  • 1 onion, finely chopped
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1 cup frozen mixed vegetables (carrots, peas, corn)
  • 1 cup shredded cheddar cheese
  • 1/2 cup ketchup
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons olive oil

Feel free to make substitutions as needed. For a lighter option, swap ground beef for ground turkey. If you prefer a dairy-free version, almond milk works well in place of regular milk.

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the ground beef, breadcrumbs, milk, beaten egg, onion, bell pepper, garlic, salt, pepper, and oregano. Mix gently until just combined.
  3. Heat olive oil in a skillet over medium heat. Add the mixed vegetables and sauté for about 5 minutes, until they are just tender. Remove from heat and allow to cool slightly.
  4. Fold the sautéed vegetables into the meatloaf mixture until evenly distributed.
  5. Transfer the mixture into a greased casserole dish, pressing it down gently to form an even layer.
  6. In a small bowl, mix together the ketchup and Worcestershire sauce. Spread this mixture over the top of the meatloaf.
  7. Sprinkle the shredded cheddar cheese over the sauce layer.
  8. Bake in the preheated oven for 45-50 minutes, until the meatloaf is cooked through and the cheese is bubbly and golden brown.
  9. Let it rest for about 10 minutes before serving. This allows the flavors to meld beautifully and makes slicing easier.
