  • 2 cups mashed potatoes (preferably left over from the night before)
  • 1 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1/4 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon chopped fresh chives (optional, for garnish)
  • Vegetable oil for frying

Instructions

  1. Start by taking your mashed potatoes out of the fridge, if they were made ahead of time. Let them come to room temperature for about 15 minutes.
  2. In a large mixing bowl, combine the mashed potatoes, cheddar cheese, Parmesan cheese, egg, flour, garlic powder, salt, and pepper. Mix until all ingredients are well incorporated.
  3. Heat about 1/2 inch of vegetable oil in a large skillet over medium heat. You’ll know the oil is ready when a small piece of potato mixture sizzles upon contact.
  4. Using your hands or a small scoop, form the potato mixture into golf ball-sized puffs. Carefully place them into the hot oil, making sure not to overcrowd the pan.
  5. Fry each puff for about 2-3 minutes on each side, or until they’re golden brown and crispy. I always remember Mama Lou saying, “Patience is key to a perfect puff!”
  6. Once fried, remove the puffs from the oil and place them on a paper towel-lined plate to drain any excess oil.
  7. Sprinkle with fresh chives for a pop of color and extra flavor, if desired.
