- 2 cups mashed potatoes (preferably left over from the night before)
- 1 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 1/4 cup all-purpose flour
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon chopped fresh chives (optional, for garnish)
- Vegetable oil for frying
Instructions
- Start by taking your mashed potatoes out of the fridge, if they were made ahead of time. Let them come to room temperature for about 15 minutes.
- In a large mixing bowl, combine the mashed potatoes, cheddar cheese, Parmesan cheese, egg, flour, garlic powder, salt, and pepper. Mix until all ingredients are well incorporated.
- Heat about 1/2 inch of vegetable oil in a large skillet over medium heat. You’ll know the oil is ready when a small piece of potato mixture sizzles upon contact.
- Using your hands or a small scoop, form the potato mixture into golf ball-sized puffs. Carefully place them into the hot oil, making sure not to overcrowd the pan.
- Fry each puff for about 2-3 minutes on each side, or until they’re golden brown and crispy. I always remember Mama Lou saying, “Patience is key to a perfect puff!”
- Once fried, remove the puffs from the oil and place them on a paper towel-lined plate to drain any excess oil.
- Sprinkle with fresh chives for a pop of color and extra flavor, if desired.
