- 2 large cucumbers, thinly sliced
- 4 ripe tomatoes, diced
- 1 large red onion, thinly sliced
- 1/4 cup apple cider vinegar
- 1/4 cup olive oil
- 2 tablespoons sugar
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon fresh dill, chopped (optional)
If you prefer a milder taste, you can substitute red onion with a sweet onion, and for a different flavor profile, try adding a splash of lemon juice or a sprinkle of feta cheese.
Instructions
- In a large bowl, combine the cucumbers, tomatoes, and onion. Mama Lou always said to slice the veggies as thin as possible, so they soak up all the marinade goodness.
- In a separate bowl, whisk together the apple cider vinegar, olive oil, sugar, salt, and black pepper until the sugar dissolves completely.
- Pour the marinade over the vegetables and toss gently to ensure everything is well-coated. Remember, patience is key; let the flavors meld together by allowing the salad to marinate in the refrigerator for at least 2 hours.
- Just before serving, sprinkle with fresh dill for an added burst of flavor. This was always Ouma’s favorite part, as she loved the aroma that fresh herbs brought to the dish.
