- 4 boneless, skinless chicken thighs (you can use breasts if preferred)

- Salt and freshly ground black pepper, to taste
- Fresh thyme or rosemary sprigs for garnish (optional but fragrant)
Instructions
- Start by patting your chicken thighs dry with paper towels. This helps the marinade stick better and ensures a nice sear.
- In a medium bowl, whisk together the maple syrup, minced garlic, soy sauce, Dijon mustard, olive oil, smoked paprika, salt, and pepper. This marinade is where all the magic happens—Mama Lou always said the secret is in letting the flavors meld.
- Place the chicken thighs in a large zip-top bag or shallow dish and pour the marinade over them. Seal or cover and refrigerate for at least 30 minutes, but for best results, let it marinate for 2-4 hours. The longer, the deeper the flavor.
- When ready to cook, preheat your oven to 400°F (200°C). Meanwhile, heat a large oven-safe skillet over medium-high heat.
- Remove the chicken from the marinade, reserving the excess marinade for later. Sear the chicken thighs skin-side down (if using skin-on) or just one side if skinless, for about 3-4 minutes until golden brown. Flip and sear the other side for another 2-3 minutes.
- Pour the reserved marinade over the chicken, then transfer the skillet to the preheated oven.
- Bake for 15-20 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the sauce is bubbling and thickened. Keep an eye on it—the sauce should be glossy and coat the chicken beautifully.
- Remove from oven, let the chicken rest for 5 minutes, then garnish with fresh thyme or rosemary before serving.
