Julia Child’s Potato Leek Soup

A classic French potato leek soup that was Julia Child’s favorite. Simple, elegant, and perfect for any occasion.

Ingredients

4 cups potatoes (peeled and diced)

3 cups leeks (cleaned and sliced)

2 tablespoons butter

6 cups chicken or vegetable stock

Salt and pepper to taste

1/2 cup heavy cream (optional)

1 tablespoon fresh chives (for garnish)

Instructions

Melt butter in a large pot over medium heat. Add leeks and cook until softened.

 

Add potatoes and stock. Bring to a boil, then simmer until potatoes are tender.

 

Puree the soup until smooth. Season with salt and pepper.

 

Stir in heavy cream if desired. Garnish with fresh chives and serve hot.
