- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 egg (for egg wash, optional)

Instructions
- In a small bowl, dissolve the sugar in warm water, then sprinkle the yeast over the top. Let it sit for about 5 minutes until it becomes frothy.
- In a large mixing bowl, combine the flour and salt. Create a well in the center and add the yeast mixture and olive oil.
- Mix until a dough forms, then add the herbs and knead until they are evenly distributed throughout the dough. This should take about 8-10 minutes by hand or 5 minutes with a stand mixer.
- Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place until it doubles in size, about 1 hour.
- Punch down the dough and turn it onto a floured surface. Gently knead in the cheeses until they are evenly incorporated.
- Shape the dough into a loaf and place it on a parchment-lined baking sheet. Cover again and let it rise for another 30 minutes.
- Preheat your oven to 375°F (190°C). If desired, beat the egg and brush it over the top of the loaf for a golden crust.
- Bake for 25-30 minutes or until the bread sounds hollow when tapped on the bottom. Let it cool slightly before slicing.
