Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish and set it aside.
- Cook Ground Beef: In a large skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat.
- Add Aromatics: Add diced onion and minced garlic to the beef. Sauté until onions are soft and translucent, about 3-4 minutes.
- Create Sauce Base: Stir in the flour and cook for 1 minute. Slowly pour in the beef broth while stirring constantly until the mixture thickens.
- Season the Mixture: Mix in the dried onion flakes, onion powder, garlic powder, Worcestershire sauce, salt, and black pepper. Simmer for 2-3 minutes.
- Add Cheese and Sour Cream: Remove from heat and stir in 1 cup of shredded cheddar cheese and the sour cream until smooth.
- Mix with Vegetables: In a large bowl, combine diced potatoes and carrots. Fold in the beef mixture gently until evenly coated.
- Assemble the Casserole: Pour the mixture into the prepared baking dish. Top with the remaining 2 cups of cheddar cheese.
- Bake Covered: Cover with foil and bake for 45 minutes.
- Finish Baking: Remove foil and bake for an additional 15 minutes, or until the top is golden and bubbly.
- Garnish and Serve: Sprinkle with dried parsley if desired. Let rest for 5 minutes before serving.

- Use pre-diced frozen vegetables to save prep time.
- Sharp cheddar adds more flavor than mild.
- Can be made ahead and refrigerated overnight.
