- 1 cup ricotta cheese
- 1/2 cup Greek yogurt
- 1/2 cup honey (preferably Greek thyme honey for authenticity)
- 3 large eggs
- 1 teaspoon vanilla extract
- 1/4 cup all-purpose flour
- Zest of one lemon
- A pinch of salt
If you’re unable to find Greek thyme honey, any good-quality honey will do just fine. And as Mama Lou would always say, “The secret ingredient is love, so don’t skimp on that!”
Instructions
- Preheat your oven to 350°F (175°C) and lightly grease a 9-inch pie pan.
- In a large mixing bowl, combine the ricotta cheese, Greek yogurt, and honey. Stir until smooth and well blended.
- Add the eggs one at a time, mixing thoroughly after each addition. Mama Lou always said that patience was key, and she was right; this part ensures a creamy texture.
- Mix in the vanilla extract, flour, lemon zest, and salt. Stir until the mixture is uniform and has no lumps.
- Pour the mixture into the prepared pie pan, using a spatula to smooth the top.
- Bake in the preheated oven for 40-45 minutes, or until the pie is set and a light golden color appears on top.
- Allow the pie to cool to room temperature before serving. As it cools, the flavors will meld together beautifully, just like Mama Lou’s stories.
