If you’re looking to adapt, you can substitute whole milk with almond milk for a dairy-free version. Granny Smith apples add a tart contrast to the sweetness, but feel free to use any apple variety you prefer.
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking dish, just like Mama Lou taught me, ensuring every corner is covered.
- In a medium bowl, whisk together the flour, baking powder, salt, and cinnamon. This step always reminded me of the cloud of flour that would puff up as Mama Lou mixed, her laughter echoing in the kitchen.
- In a large bowl, cream the softened butter and granulated sugar until light and fluffy, about 3 minutes. Mama Lou always said this was the secret to a tender crumb.
- Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
- Gradually add the dry ingredients to the wet mixture, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined to avoid overmixing.
- Fold in the chopped apples gently. Mama Lou would often sneak a slice or two to Ouma and me during this step.
- Pour the batter into the prepared baking dish. In a small bowl, mix the brown sugar and nutmeg, then sprinkle evenly over the top of the batter for a sweet crust.
- Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean. The house will fill with a heavenly cinnamon aroma, reminiscent of those cherished family gatherings.
- Let the cake cool in the pan for 15 minutes before serving warm or at room temperature.
