- 1 cup imitation crab meat, shredded
- 1 tablespoon soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil

- 1 teaspoon wasabi paste (optional)
- 2 tablespoons sesame seeds, toasted
- 1 sheet nori, cut into thin strips
Feel free to substitute the imitation crab with cooked shrimp or even grilled chicken for a different take. Mama Lou always said cooking is about making it your own, and I couldn’t agree more.
Instructions
- Start by preparing your cucumbers. Slice them thinly and place them in a large salad bowl.
- Add the diced avocado and shredded imitation crab meat to the bowl with the cucumbers.
- In a small mixing bowl, whisk together the soy sauce, rice vinegar, sesame oil, mayonnaise, and wasabi paste if using. This dressing will blend all the flavors together beautifully.
- Pour the dressing over the salad mixture and gently toss everything together until well coated.
- Sprinkle the toasted sesame seeds over the salad and garnish with the strips of nori for that authentic sushi touch.
- Let the salad sit for about 10 minutes in the fridge for the flavors to meld together perfectly.
