Feel free to substitute Greek yogurt with sour cream for a creamier texture or add a pinch of smoked paprika for a hint of warmth. Mama Lou always encouraged us to experiment and make the recipe our own, and I hope you’ll do the same.
Instructions
- Wash and dry the cucumbers thoroughly. Mama Lou always said that a clean start makes for a brighter dish, and I couldn’t agree more.
- Thinly slice the cucumbers using a sharp knife or a mandoline for uniformity. Remember, it’s these little details that make each bite perfect.
- In a small bowl, mix the Greek yogurt, lemon juice, olive oil, salt, pepper, dill, and garlic powder until well combined.
- Add the cucumber slices to the bowl and gently toss them with the yogurt mixture until each slice is evenly coated.
- Let the cucumbers sit for about 10 minutes. This allows the flavors to meld together, much like the harmony in Mama Lou’s garden.
- Serve immediately or chill in the refrigerator for up to an hour before serving.
