Ingredients
Scale
- 2 cups diced fresh tomatoes
- 1 cup diced cucumber
- 1/4 cup finely chopped red onion
- 1/4 cup chopped fresh cilantro
- 1 jalapeño pepper, seeded and finely chopped
- 2 tablespoons fresh lime juice
- 1 tablespoon olive oil
- Salt to taste
- Ground black pepper to taste
Feel free to adjust the heat by adding or reducing the jalapeño. If cilantro isn’t your favorite, try substituting with fresh parsley for a different flavor twist.
Instructions
- In a large mixing bowl, combine the diced tomatoes and cucumber, mixing gently to ensure even distribution.
- Add the finely chopped red onion, cilantro, and jalapeño to the bowl, stirring to combine all the ingredients thoroughly.
- Pour in the fresh lime juice and olive oil, tossing the mixture lightly to coat all the ingredients with the dressing.
- Season with salt and ground black pepper to taste, giving the salsa a final stir.
- Allow the salsa to sit for at least 15 minutes before serving. This resting time allows the flavors to meld beautifully.
As Mama Lou always said, “A good salsa is like a good story, it needs time to develop and become unforgettable.” Letting it rest is key!
