  • 2 cups diced cucumber
  • 2 ripe avocados, diced
  • 1/4 cup finely chopped red onion
  • 1/4 cup chopped fresh cilantro
  • 1 jalapeño, seeded and finely chopped
  • Juice of 2 limes
  • Salt and pepper to taste
  • Optional: 1/2 cup cherry tomatoes, halved
  • Optional: 1/4 cup crumbled feta cheese

Feel free to substitute the jalapeño with bell pepper if you prefer a milder salsa. If cilantro isn’t to your taste, parsley makes an excellent alternative.

Instructions

  1. Start by peeling and dicing the cucumbers into small, even pieces. Place them in a large mixing bowl.
  2. Cut the avocados in half, remove the pit, and dice the flesh. Add the avocado to the bowl with the cucumbers.
  3. Finely chop the red onion and cilantro, then add them to the bowl. The aroma of fresh cilantro always takes me back to those summer days with Mama Lou.
  4. For a bit of heat, chop the jalapeño finely, and add it to the mix. If you’re not a fan of spice, remember our beloved bell pepper substitute.
  5. Squeeze the juice of two limes over the mixture. This zesty addition is what gives the salsa its refreshing kick, a trick Mama Lou always swore by.
  6. Season with salt and pepper to taste. Don’t be afraid to taste as you go – cooking is all about finding the balance that suits your palate.
  7. Gently toss all the ingredients together, ensuring they’re well combined without mashing the avocado too much.
  8. If using, add the cherry tomatoes and feta cheese at the end for an extra burst of flavor and color.

Let the salsa sit for about 10 minutes to allow the flavors to meld together before serving. This is an excellent time to set the table, just like we used to do with Ouma, making sure everything was perfect for our family feasts.
