Ingredients
- 1 (32-ounce) bag frozen tater tots (choose your favorite brand for best texture)
- 6 slices thick-cut bacon, chopped
- 1 cup sauerkraut, well-drained and gently squeezed to remove excess liquid
- 1 cup shredded Swiss cheese
- 2 tablespoons Thousand Island dressing (store-bought or homemade – I’ll share Mama Lou’s version below)
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- Salt and freshly ground black pepper, to taste
- 2 tablespoons chopped fresh parsley (optional, for garnish)
Substitution tip: If you want to keep it lighter, you can swap bacon for turkey bacon or use a vegetarian bacon alternative. For a tangier twist, try adding a splash of pickle juice to the sauerkraut before mixing it in.
Instructions
- Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper or a wire rack to ensure maximum crispiness.
- Spread the frozen tater tots evenly across the prepared baking sheet. Bake for 25-30 minutes, turning once halfway through, until they’re golden brown and crispy. Mama Lou always said, “Patience is the secret to crispy potatoes!”—and she was right.
- While the tots bake, cook the chopped bacon in a skillet over medium heat until crisp, about 6-8 minutes. Use a slotted spoon to transfer the bacon to a paper towel-lined plate to drain excess fat.
- In the same skillet, add the drained sauerkraut and sauté for 2-3 minutes just to warm it up and mellow the flavors. This step is a little homage to Mama Lou’s way of coaxing out sweetness from tangy ingredients without losing their bite.
- Once the tots are crispy, remove them from the oven and transfer to a large bowl. Sprinkle the garlic powder, smoked paprika, salt, and pepper over the tots. Toss gently to coat evenly.
- Add the cooked bacon, warm sauerkraut, shredded Swiss cheese, and Thousand Island dressing to the bowl. Toss everything together carefully so the cheese melts slightly from the heat of the tots, binding all the flavors beautifully.
- Return the mixture to the baking sheet and spread it out evenly. Place back in the oven for another 5-7 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and garnish with fresh parsley if desired. Serve immediately while warm and melty.
When I made this for Ouma and our friends, the room filled with laughter and the irresistible aroma of bacon and melted cheese. It was a simple moment—just good food and even better company—but those are the memories I cherish the most.
