Ingredients
Scale
- 4 cups of thinly sliced cucumbers
- 1/2 cup of sour cream
- 1/4 cup of mayonnaise
- 2 tablespoons of apple cider vinegar
- 1 tablespoon of fresh dill, chopped
- 1 teaspoon of sugar
- 1/2 teaspoon of salt
- 1/4 teaspoon of freshly ground black pepper
- 1 small red onion, thinly sliced
If you prefer a lighter version, you can substitute Greek yogurt for the sour cream. For a bit of crunch, consider adding some sliced radishes or a handful of toasted almonds.
Instructions
- Start by slicing the cucumbers and red onion as thinly as possible. Mama Lou always said that the thinner the slice, the better they absorb the flavors.
- In a large mixing bowl, combine the sour cream, mayonnaise, apple cider vinegar, chopped dill, sugar, salt, and pepper. Whisk until smooth and well combined.
- Add the sliced cucumbers and red onion to the bowl. Toss gently to ensure each slice is coated with the creamy dressing. Take your time with this step; itβs all about infusing love into the dish, just as Mama Lou taught me.
- Cover the bowl with plastic wrap and refrigerate for at least an hour before serving. This allows the flavors to meld together beautifully.
- Before serving, give it one last gentle toss, and adjust the seasoning if necessary.
