- 12 ounces fresh cranberries (about 3 cups)
- 1 cup granulated sugar (adjust to taste)
- 1 cup freshly squeezed orange juice (about 2 large oranges)
- Zest of 1 large orange (avoid the white pith for bitterness)
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon freshly grated nutmeg (optional, but adds warmth)
- 1/4 cup water
- 1 teaspoon vanilla extract (optional, for depth of flavor)
- Pinch of salt (to balance the sweetness)
If fresh cranberries aren’t available, frozen cranberries work beautifully—just thaw them slightly before cooking. For a lower-sugar option, you can swap half the sugar with honey or maple syrup, but remember to taste as you go. Sometimes, Ouma and I would sneak a drizzle of honey into the pot, thinking it was our own secret twist inspired by Mama Lou’s flexibility in the kitchen.
Instructions
- Rinse the fresh cranberries under cold water and pick out any stems or soft berries.
- In a medium saucepan, combine the sugar, orange juice, and water. Heat over medium heat, stirring occasionally, until the sugar dissolves completely.
- Add the cranberries, orange zest, cinnamon, nutmeg, and a pinch of salt to the saucepan. Stir to combine.
- Bring the mixture to a gentle boil, then reduce the heat to low and let it simmer uncovered for about 10-15 minutes. You’ll notice the cranberries start to pop and break down, releasing their natural pectin which thickens the sauce.
- Stir occasionally to prevent sticking and to check the sauce’s thickness. If you prefer a chunkier texture, simmer less; for a smoother sauce, cook a bit longer.
- Once thickened to your liking, remove the saucepan from heat and stir in the vanilla extract if using. This little touch adds a lovely warmth that reminds me of evenings spent with Mama Lou and Ouma, sipping tea and sharing stories.
- Allow the sauce to cool at room temperature—it will continue to thicken as it cools. Serve warm or chilled, depending on your preference.
