Instructions
- Preheat oven to 350°F (175°C).
- Cook sausage in a skillet over medium heat until browned.
- In a large bowl, whisk together eggs, milk, salt, and pepper.
- Layer hash browns, cooked sausage, onion, bell pepper, and cheese in a greased baking dish.
- Pour egg mixture over the layers.
- Bake for 45-50 minutes or until eggs are set and top is golden.
- Let cool slightly before serving.
Notes
- For a vegetarian version, omit sausage and add more vegetables.
- Can be prepared ahead and refrigerated overnight.
