Ingredients
Scale
As you gather your ingredients, imagine Mama Lou’s kitchen, where every item had its place and purpose. Here’s what you’ll need to create this delightful cake:
- 2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1/2 cup unsweetened cocoa powder
- 1 1/2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup buttermilk (or substitute with 3/4 cup milk + 1 tablespoon lemon juice)
- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup boiling water
- 1 cup crushed chocolate sandwich cookies
- 1 1/2 cups heavy cream
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract (for frosting)
- 1 cup crushed chocolate sandwich cookies (for frosting)
Instructions
Baking this cake is like inviting a piece of home into your kitchen. Follow these steps, and remember to savor each moment, just as Mama Lou taught me.
- Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
- In a large mixing bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add buttermilk, vegetable oil, eggs, and vanilla extract to the dry ingredients. Mix until well combined.
- Gradually stir in boiling water until the batter is smooth and thin. This step always reminds me of how Mama Lou would say, “Patience brings perfection.”
- Fold in 1 cup of crushed chocolate sandwich cookies.
- Divide the batter evenly between the prepared cake pans.
- Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cakes to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
- For the frosting, whip the heavy cream until soft peaks form. Add powdered sugar and vanilla extract, and continue to whip until stiff peaks form.
- Gently fold in 1 cup of crushed chocolate sandwich cookies into the whipped cream.
- Frost the cooled cakes, layering and spreading the cookies and cream frosting generously between and on top of the cakes.
