  • 2 large chicken breasts, boneless and skinless
  • 1 tablespoon olive oil
  • 2 teaspoons garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 4 large potatoes, peeled and cubed
  • 1/2 cup milk
  • 2 tablespoons butter
  • 1 cup chicken broth
  • 2 tablespoons all-purpose flour
  • 1/2 cup shredded cheddar cheese
  • 1 cup corn kernels (fresh or frozen)
  • 1 tablespoon chopped fresh parsley (optional)

If you’re looking for substitutions, you can use turkey instead of chicken, or swap out cheddar for mozzarella to suit your taste.

Instructions

With everything in place, it’s time to dive into cooking. Follow these steps to create your own delightful bowls:

  1. Preheat your oven to 375°F (190°C).
  2. Rub the chicken breasts with olive oil, garlic powder, paprika, salt, and pepper. Place them in a baking dish and bake for 25-30 minutes, or until cooked through and juices run clear.
  3. While the chicken is baking, place the cubed potatoes in a large pot and cover with water. Bring to a boil and cook until tender, about 15-20 minutes.
  4. Drain the potatoes and return them to the pot. Add the milk and butter, then mash until smooth and creamy. Season with salt and pepper to taste.
  5. In a small saucepan over medium heat, whisk together the chicken broth and flour until smooth. Cook until the mixture thickens into a gravy, about 5 minutes.
  6. Once the chicken is done, let it rest for a few minutes before slicing it into strips.
  7. To assemble the bowls, place a generous scoop of mashed potatoes in each bowl. Top with sliced chicken, corn, and a sprinkle of cheddar cheese.
  8. Drizzle the gravy over the top and garnish with parsley, if using.
