If you don’t have amaretto, you can substitute with a mix of almond extract and extra coffee. For a non-alcoholic version, simply omit the amaretto and use almond extract to retain the flavor profile.

Instructions

Follow these steps to craft a Cherry Amaretto Tiramisu that’s sure to impress your family and friends:

  1. Begin by brewing a strong cup of coffee and letting it cool. Combine the coffee with the amaretto in a shallow dish.
  2. Dip each ladyfinger into the coffee-amaretto mixture for just a second, ensuring they are soaked but not soggy. Line the bottom of a 9×13 inch dish with half of the soaked ladyfingers.
  3. In a mixing bowl, beat the mascarpone cheese, heavy cream, sugar, and vanilla extract until smooth and creamy, about 3-4 minutes. This was always Ouma’s favorite part, watching the ingredients transform into a luscious cream.
  4. Spread half of the mascarpone mixture over the ladyfingers in the dish, smoothing it with a spatula.
  5. Scatter half of the cherries over the mascarpone layer, pressing them slightly into the cream.
  6. Repeat the layers with the remaining ladyfingers, mascarpone mixture, and cherries.
  7. Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight if possible. Mama Lou always said that patience was the secret ingredient to the best tiramisu.
  8. Before serving, dust the top with cocoa powder and sprinkle with dark chocolate shavings if desired.
