Instructions
- In a small bowl, dissolve the sugar and yeast in warm water. Let it sit for about 5 minutes until it becomes frothy—this is a sign that the yeast is active and ready to go.
- In a large mixing bowl, combine the flour and salt. Create a well in the center and pour in the yeast mixture and olive oil. Stir until a dough begins to form.
- Transfer the dough onto a floured surface and knead for about 8-10 minutes until it becomes smooth and elastic. This step always brings back memories of Ouma and I giggling, challenging each other to see who could knead the dough longer.
- Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until it doubles in size.
- Preheat your oven to 375°F (190°C). Punch down the risen dough and roll it out into a rectangle on a floured surface.
- Combine the mozzarella, Parmesan, minced garlic, and parsley in a bowl. Spread this mixture evenly over the dough, leaving a small border around the edges.
- Roll the dough up tightly from one long side, pinching the seam to seal. Place the roll seam-side down on a baking sheet lined with parchment paper.
- Brush the top with melted butter and let it rest for another 15 minutes. This step gives the bread that irresistible golden crust Mama Lou always achieved.
- Bake for 25-30 minutes or until the bread is golden brown and sounds hollow when tapped. Let it cool slightly before slicing.
