  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter, chilled and cubed
  • 2 cups fresh blackberries
  • 1/4 cup honey
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 1/2 cup shelled pistachios, roughly chopped
  • 1 teaspoon vanilla extract
  • Optional: 1/4 teaspoon almond extract for a deeper nutty flavor

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 inch baking dish with parchment paper, allowing some overhang for easy removal.
  2. In a medium bowl, mix the flour, sugar, and salt. Add the chilled butter cubes and use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.
  3. Press the mixture into the bottom of the prepared baking dish, creating an even layer. Bake for 15 minutes or until the edges are lightly golden.
  4. While the crust is baking, combine the blackberries, honey, lemon juice, and cornstarch in a small saucepan. Cook over medium heat, stirring occasionally, until the mixture thickens and bubbles, about 5-7 minutes.
  5. Remove the crust from the oven and pour the blackberry mixture over it. Spread evenly using a spatula.
  6. Sprinkle the chopped pistachios evenly over the top of the blackberry layer, pressing them slightly into the mixture to help them adhere.
  7. Return the dish to the oven and bake for an additional 15-20 minutes, or until the pistachios are lightly toasted.
  8. Let the bars cool completely in the dish before lifting them out using the parchment overhang. Cut into squares and serve.
