- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/4 teaspoon salt
- 3/4 cup unsalted butter, chilled and cubed
- 2 cups fresh blackberries
- 1/4 cup honey
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch
- 1/2 cup shelled pistachios, roughly chopped
- 1 teaspoon vanilla extract
- Optional: 1/4 teaspoon almond extract for a deeper nutty flavor
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8 inch baking dish with parchment paper, allowing some overhang for easy removal.
- In a medium bowl, mix the flour, sugar, and salt. Add the chilled butter cubes and use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.
- Press the mixture into the bottom of the prepared baking dish, creating an even layer. Bake for 15 minutes or until the edges are lightly golden.
- While the crust is baking, combine the blackberries, honey, lemon juice, and cornstarch in a small saucepan. Cook over medium heat, stirring occasionally, until the mixture thickens and bubbles, about 5-7 minutes.
- Remove the crust from the oven and pour the blackberry mixture over it. Spread evenly using a spatula.
- Sprinkle the chopped pistachios evenly over the top of the blackberry layer, pressing them slightly into the mixture to help them adhere.
- Return the dish to the oven and bake for an additional 15-20 minutes, or until the pistachios are lightly toasted.
- Let the bars cool completely in the dish before lifting them out using the parchment overhang. Cut into squares and serve.
