  • 1/2 cup unsalted butter, cold and cubed
  • 3/4 cup whole milk
  • 1 pound breakfast sausage
  • 1/4 cup all-purpose flour
  • 2 cups whole milk
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped fresh chives (optional, for garnish)

Instructions

  1. Preheat your oven to 425°F. Begin by preparing the biscuit dough: In a large bowl, whisk together the flour, baking powder, and salt.
  2. Using a pastry cutter or your fingers, cut the cold butter into the flour mixture until it resembles coarse crumbs. Stir in the milk until just combined.
  3. Turn the dough onto a floured surface and gently knead it a few times. Roll it out to fit a 12-inch pizza pan, then transfer it to the pan.
  4. Bake the biscuit base for about 10-12 minutes or until lightly golden. Meanwhile, in a skillet over medium heat, cook the sausage until browned and crumbled.
  5. Sprinkle the flour over the cooked sausage, stirring for about a minute. Gradually add the milk, stirring constantly until the mixture thickens into gravy. Season with black pepper.
  6. Once the biscuit base is ready, spread the sausage gravy evenly over it. Sprinkle the cheddar cheese on top.
  7. Return to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
  8. Remove from the oven and let it cool slightly. Garnish with fresh chives if desired. Slice and serve warm.
