Ingredients
- 3 cups cooked chicken, shredded or diced (rotisserie chicken works great)
- 12 ounces pasta (penne or rotini works best)
- 1 cup barbecue sauce (your favorite brand or homemade)
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup sour cream (or Greek yogurt for a lighter option)
- 1/4 cup chopped red onion (optional, for a little bite)
- 1/2 cup diced bell peppers (any color)
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh parsley or cilantro for garnish (optional)
Substitution tips: If you don’t have cheddar, Monterey Jack or Gouda can add a lovely smoky flavor. You can swap sour cream for cream cheese if you want a richer texture, and feel free to add corn or black beans for an extra southwestern flair.
Instructions
- Preheat your oven to 375°F (190°C). Grease a large baking dish with a little olive oil or nonstick spray.
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- While the pasta cooks, heat olive oil in a skillet over medium heat. Add minced garlic, chopped red onion, and diced bell peppers. Sauté for about 4-5 minutes until softened and fragrant.
- In a large bowl, combine the cooked pasta, sautéed veggies, shredded chicken, barbecue sauce, sour cream, half of the cheddar cheese, and half of the mozzarella cheese. Season with salt and pepper to taste. Mix everything gently until well combined.
- Transfer the mixture into the prepared baking dish, spreading it out evenly. Sprinkle the remaining cheddar and mozzarella cheese over the top.
- Bake uncovered for 20-25 minutes, or until the cheese is melted and bubbly, and the edges are slightly golden.
- Remove from the oven and let it cool for 5 minutes. Garnish with fresh parsley or cilantro before serving.
