- 1 cup panko breadcrumbs

- 1/4 teaspoon black pepper
- 1/4 cup mayonnaise
- 2 tablespoons sweet chili sauce
- 1 tablespoon sriracha sauce
- 1 tablespoon honey
- 1 tablespoon lime juice
Feel free to substitute buttermilk with regular milk mixed with a teaspoon of lemon juice if needed. The sriracha sauce can be adjusted to cater to your preferred level of spiciness.
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a shallow dish, combine the buttermilk, garlic powder, paprika, salt, and pepper. Add the salmon cubes, ensuring they are well-coated, and let them marinate for 15-20 minutes.
- In a separate bowl, combine the panko breadcrumbs and flour.
- Remove the salmon cubes from the marinade, letting any excess drip off, then roll them in the breadcrumb mixture until fully coated.
- Arrange the salmon bites in a single layer on the prepared baking sheet. Bake for about 12-15 minutes or until the salmon is cooked through and the coating is golden brown and crispy.
- While the salmon is baking, prepare the sauce by whisking together mayonnaise, sweet chili sauce, sriracha, honey, and lime juice in a bowl.
- Once the salmon bites are ready, let them cool for a few minutes before drizzling with the prepared sauce.
