Ingredients
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/4 cup milk
- 3 ripe bananas, mashed
- 1/2 cup chopped walnuts (optional)
For those with dietary preferences, you can easily substitute the all-purpose flour with a gluten-free blend, or replace the butter with coconut oil for a dairy-free version. The walnuts add a delightful crunch, but feel free to leave them out or replace them with your favorite nuts or chocolate chips.
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- In a large mixing bowl, whisk together the flour, granulated sugar, brown sugar, baking soda, and salt.
- In another bowl, mix the melted butter, eggs, vanilla extract, and milk until well combined.
- Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined.
- Fold in the mashed bananas and chopped walnuts (if using), being careful not to overmix.
- Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
- Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
- Let the banana bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
As you bake, remember the magic in the process. Mama Lou always said that the secret ingredient was a generous pinch of love, and I believe that’s what makes this Banana Bread Delight truly special.
