- 1 cup whole wheat flour

For substitutions, you can use rice flour instead of oat flour if you prefer. The pureed vegetables can be swapped with whatever is in season or what your baby prefers. This flexibility allows the recipe to grow with your child’s tastes.
Instructions
- In a mixing bowl, combine the whole wheat flour and oat flour. This combination reminds me of Mama Lou’s way of using every grain to its fullest potential.
- Add the water and olive oil, mixing until a dough begins to form. If the dough feels too dry, add a little more water, a teaspoon at a time.
- Knead the dough on a lightly floured surface for about 5 minutes, until it becomes smooth and elastic. Mama Lou always said the secret to good pasta is in the kneading, and I believe her words to this day.
- Roll the dough into a thin sheet. I remember using an old wine bottle when a rolling pin wasn’t available; it’s those little improvisations that make cooking so charming.
- Cut the dough into small shapes or strips, perfect for little hands and adventurous gums.
- Bring a pot of water to a gentle boil and cook the pasta for about 2-3 minutes, or until it floats to the top and is tender.
- Drain and mix with the pureed vegetables, adding a pinch of herbs if desired. Serve warm, and watch as your little one enjoys their first homemade meal.
